Experts from Quaker India share a few nutty and chocolaty recipes to try out this festive season

Chocolate baked oats with chocolate chips


Ingredients
1-½ cups Quaker Oats
⅓ cup sugar
¼ cup melted butter/oil
Egg white from 2 eggs
1 tsp baking powder
¾ cup skimmed milk
1 tsp vanilla flavour
2 tbsp cocoa
⅓ cup chocolate chips

Method
· Pre-heat the oven to 180°C.
· Grease an 8” pan or line a cupcake tray with cupcake liners. Mix all ingredients together.
· Bake for 20-25 mins or until the edges are golden brown.


Apple cinnamon cake

1 cup Quaker Oats
1 cup skimmed milk
½ cup unsweetened apple sauce
2 tbsp orange juice
½ cup brown sugar
1 grated apple
1 cup buckwheat flour
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
Salt to taste

Method
· Preheat oven to 200°C.
· Soak Quaker Oats in milk for 15 mins.
· Mix all dry ingredients.
· Squeeze out all the juice from the grated apple and add to oats mixture, with apple sauce and orange juice.
· Add another tbsp of orange juice if mixture looks dry.
. Pour batter into a 9” greased pan and bake for 20-25 mins.

For apple sauce: 1 small apple, diced, combined with 2 tbsp water. Cook till apple is completely mushy. Mash to a smooth consistency.


Oats and dates pie

20 gm roasted and powdered Quaker Oats
20 gm semolina (suji)
Sugar to taste
2.5 ml oil
5 gm chopped dates
1 tsp lemon juice
50 gm peeled and grated apple
15 gm chopped walnuts
2 tsp boiling water

Method
· Mix Quaker Oats and semolina with sugar and oil.
· Mix apples, dates and walnuts. Add boiling water and lemon juice and stir till smooth. Pre-heat oven (375°F). Grease a baking dish.
· Spread half of the Quaker Oats and semolina mixture in the dish.
· Top it with a layer of date mixture and cover with rest of Quaker Oats mixture. Bake for 35-40 mins. Reduce heat after 20 mins if topping is becoming brown.


Baked donuts

Ingredients
⅓ cup powdered Quaker Oats
⅓ cup whole wheat flour
⅓ cup refined flour (maida)
⅓ cup powdered sugar
125 gm low fat yogurt (slightly sour)
Egg white from 2 eggs
1 tbsp vegetable oil
¼ tsp vanilla flavour
½ tsp baking powder

For glazing
50 gms chocolate
A few colourful sprinkles

Method
· Mix flours, Quaker Oats, baking powder and sift.
· Whisk together egg white, curd, oil, sugar and vanilla. Gently add dry ingredients. Pre-heat oven to 180°C. Grease mini ring moulds and pour the batter.
· Bake for 10 mins. Cool.
For glazing: Dip donuts in melted chocolate and decorate with sprinkles.

Note
For powdered Quaker Oats, roast the oats for 2-3 mins. Cool and grind in a mixer.
