Hyderabad’s dining scene is embracing global flavours, regional cuisine and creative food experiences in 2026. Korean dishes, matcha, ube, specialty coffee, functional drinks, Telugu cuisine and chef-led pop-ups are among the trends gaining popularity with local diners.

Hyderabad: Hyderabad’s food scene is changing, with diners becoming more curious about what is beyond the city’s much-loved biryani and traditional favourites. In 2026, global flavours, regional cooking and creative café menus are finding space alongside familiar Hyderabad staples.

Here are some food trends that are catching the attention of Hyderabad food lovers.


Korean Food Beyond Kimchi

Korean cuisine is gaining ground among Hyderabad diners, with dishes such as Korean barbecue, bulgogi and lighter Korean-inspired meals finding an audience. The growing interest is part of the city’s wider appetite for lesser-known global cuisines.

Matcha Everything

Matcha has moved beyond the latte. Cafes are experimenting with matcha cheesecakes, cookies, ice creams, pancakes and other desserts. The ingredient’s distinctive flavour and vibrant green colour have also made it popular on social media.

Telugu Food Gets the Spotlight

While global flavours are gaining popularity, local cuisine is making an equally strong comeback. Traditional Telugu and Telangana dishes are increasingly appearing in contemporary restaurants and more polished dining formats.

Ube Takes Over Café Menus

The purple Filipino yam is emerging as another colourful cafe favourite. Ube is being used in lattes and desserts, offering a sweet, nutty flavour and a striking purple hue that is quickly making its way onto Hyderabad’s specialty coffee menus.

Specialty Coffee and Functional Drinks

Coffee is becoming more serious, with cafés paying greater attention to brewing and sourcing. At the same time, zero-proof cocktails and functional beverages are gaining space on menus.

Chef Pop-Ups and Curated Dining

Instead of only visiting restaurants, diners are increasingly looking for experiences around food. Chef-led pop-ups, collaborations and intimate supper clubs are adding a more experimental element to Hyderabad’s dining culture.
