Hyderabad: Achari Chicken/ Achari Murgh is one of the best recipes for this chilling winter because it has an authentic flavour and the taste of pickle. A tasty, delicious recipe rather than a usual one, it is flavoured with pickling spices.
Many dishes are made in the Achari style, like Achari Mutton / Ghosh, Achari Paneer, and a few veggies as well. Cooked with mustard oil or any other oil like sesame or vegetable oil can also be used, but to enhance the taste and flavor, it’s best to use mustard oil.
It goes well with all the Indian bread, flavoured rice varieties, and plain steamed rice.

Serves : 4
Ingredients:
* Chicken : 1/2 Kg
* Salt : 1 1/2 tsp or as needed
* Chilli Powder : 2 tsp or as needed
* Turmeric Powder : 1/2 tsp
* Coriander Powder : 1 tsp
* Cumin Powder : 1/2 tsp
* Garam Masala : 1/4 tsp
* Onion : 2 cut into long pieces, deep fried
* Lemon : 1/2 a squeeze
* Curd : 1/4 cup
* Oil : 2 tbsp ( mustard/ sesame Oil)
* Caraway Seeds : 1/2 tsp
* Cinnamon : 2 to 3 sticks
* Cloves : 4
* Cardamoms : 3
* Mustard Seeds : 1/2 tsp
* Fenugreek Seeds : 1/4 tsp
* Red Chilies : 4 to 5
* Curry Leaves : 2 to 3 reeds
* Tomatoes : 2 ground into puree
* Oil : 1 or 2 tsp
* Mustard Seeds : 1/2 tsp
* Cumin Seeds : 1/2 tsp
* Red Chilies : 2 to 3 cut into pieces
* Curry Leaves : A few to temper
Preparation:
* Take 1/2 kg chicken and clean, wash and marinate it with 1 1/2 tsp of salt, 2 tsp of chilli powder as per taste and 1/2 tsp of Turmeric Powder
* Add 1 Tsp of coriander powder, 1/2 tsp of cumin powder, 1/4 tsp of garam masala and 1 tsp of ginger garlic paste.
* Take 2 onions, cut them into long pieces and deep fry them until brown and crisp and add them all to the marination to enhance the taste.
* Add 1/2 a squeeze of lemon, add 1/4 cup of curd and mix them all well and marinate it for a minimum 1/2 an hour to combine the flavours well.
* Heat a pan and add either sesame oil or mustard oil to enhance the pickle flavour and taste of the recipe.
* Add 2 tbsps of pil, add 1/2 tsp of caraway seeds, 2 to 3 cinnamon sticks, 4 cloves, and 3 cardamoms.
* Add 1/2 tsp of mustard seeds and 1/4 tsp of fenugreek seeds and let it splutter.
* Add 4 to 5 red chilies and sauté until they change in colour, then add 2 to 3 reeds of curry leaves.
* Add marinated chicken, stir well, place a lid and let cook.
* Add tomato puree, place a lid and cook until tomato paste is completely cooked.
* Add some water as needed, let it cook on medium flame until water evaporates and chicken is well cooked and oil separates.
* Put off the flame, and temper it as it is. heat a pan with some sesame oil, add 1/2 tsp of mustard and cumin seeds, and let it splutter.
* Add 2 to 3 red chilies sauce until a change in colour, add a few curry leaves, add it to the cooked chicken and place a lid.
* Tasty Achari Chicken is ready.
