Great combo for the weekend
Semiya omelette is a perfect mix of protein and nutrients

Made with semiya / vermicelli, egg along with loads of veggies and with many variations like cheese, butter, oats can also be added.
Semiya/vermicelli is a traditional type of pasta, similar to spaghetti/thin small noodles. It is also referred as sevvaiah, sevai, and semai as well.
Different recipes like kheer, upma, pudding, halwa and pulao can also be prepared with semiya / vermicelli. Semiya is generally made with white flour (maida).
This omelette is one recipe that is quick to make on a lazy weekend. Try out this variant of semiya omelette which is a nutritious recipe with loads of veggies. It is the best dish for your taste buds, with simple ingredients.
Ingredients:
* Semiya : ½ cup
* Eggs : 3 nos
* Butter : a teaspoon
* Onion : 1 finely chopped
* Green chillies : 2 finely chopped
* Capsicum : 1 finely chopped
* Tomato : 1 finely chopped
* Salt : ¾ teaspoon
* Chilli powder : 1 teaspoon
* Oil : 1 teaspoon
Method:
* Heat a pan with 1 tsp of oil.
* Add 1/2 a cup of semiya / vermicelli and roast it on low-medium flame till brown.
* Add 1 finely chopped onion, fry for one minute, add 1 finely chopped capsicum, 2 green chillies.
* Then goes one finely chopped tomato.
* Any vegetable of our choice can be added.
* Place a lid and cook till tomatoes are soft.
* Break 3 eggs in a mixing bowl and beat / blend them well.
* Add 3/4 tsp of salt or as needed, 1 tsp of chilli powder as needed mix well.
* Then, add roasted semiya mixture to the egg and mix them all.
* Add a few strands of coriander Leaves and mix well.
* Heat a thick-bottomed pan with 1 tsp of butter (oil or ghee can also be used).
* Pour the egg mixture as required.
* Lower the flame and let it cook for 2 to 3 minutes with a lid on it.
* Check if it’s cooked, flip turn, and cook it on the other side as well.
* Add some oil if required, and the yummy omelette is ready.
