ITC Kakatiya Hyderabad to host Independence Day brunch featuring flavours from across India

ITC Kakatiya will mark India’s 79th Independence Day with a special buffet brunch at Deccan Pavilion, curated by Chef Arvind Singh. The menu brings together regional dishes from Kashmir to Kerala, highlighting India’s diverse culinary traditions, ingredients and cooking styles.

Hyderabad: ITC Kakatiya will celebrate India’s 79th Independence Day with a special buffet brunch at Deccan Pavilion, curated by Chef Arvind Singh. The culinary experience will bring together flavours from across the country, highlighting the diverse traditions, ingredients and cooking styles that define Indian cuisine.

The menu takes diners on a journey from the snow-clad valleys of Kashmir to the coastline of Kerala, with dishes representing the culinary identity of different regions.


The experience begins with Kashmiri Yakhni Shorba, a delicate and aromatic preparation showcasing the flavours of Kashmir. Rajasthan is represented by Dal Tinmela, while Gujarat features the popular Dal Dhokli, a combination of spiced lentils and handmade wheat dumplings.

The menu then moves to Uttarakhand with Aloo Jhakya, reflecting the distinctive flavours of Himalayan home-style cooking. From Odisha, Dalma, made with lentils and vegetables, represents the simplicity of traditional Odia cuisine.

The coastal flavours of Kerala feature in Malabar Fish Curry, combining fish, coconut and aromatic spices. The culinary journey then moves to the Deccan with Hyderabadi Kacche Gosht Ki Biryani, in which marinated meat and fragrant rice are cooked together using the traditional dum technique.

The dessert selection includes Rajasthani Ghevar and Maharashtrian Shrikhand, bringing the meal to a sweet conclusion.

“For me, Indian cuisine has always been a story of people, places and traditions coming together. Every region has its own identity, yet there is a beautiful thread that connects them all. Through this brunch I wanted the guests to travel across India through its flavours and discover the diversity, warmth and soul that make our cuisine truly extraordinary,” said Chef Arvind Singh.

The Independence Day brunch is positioned as a celebration of India’s culinary diversity, bringing regional flavours together under one roof and reflecting the country’s spirit of unity in diversity.

The brunch will be held at Deccan Pavilion, ITC Kakatiya, on August 15, 2026, from 12.30 pm to 2.45 pm.
