Badam/ almond milk a very healthy and refreshing traditional Indian drink which which boosts up our energy levels. The drink can be relished both hot or chilled. Like several other dairy products, badam milk is also rich in several healthy nutrients especially Vitamin E and Vitamin D, and consuming it often may help prevent vitamin D deficiency. This protein-packed drink also helps to beat weakness and improve overall health. It is also our age-old traditional secret to building up our immune system. So this summer, let’s relish this creamy, nutty homemade drink, with no additives and thus completely healthy drink. It can be served hot in winters and chilled in summers. The simple recipe can be tried right away at home avoiding flavoured drink powders from the market, to keep away from the starch, preservatives, and sugar. So, let’s treat our taste buds and quench our thirst in a healthy way.

Serves: 3 Members
Preparation Time: 30 Minutes

Ingredients:

•Milk: ½ a litre
•Almonds: 20 to 25 nos
•Sugar: 3 tbsp
•Cardamom powder: ½ tsp
•Saffron: a few strands
•Almonds for garnishing: a handful of finely chopped almonds
•Pistachios: a handful of finely chopped almonds for garnishing

Method

•Heat 1/2 a litre of milk in a pan, on high flame, initially and then lower the flame and let it boil for a while.
•In meantime will prepare the badam/almond powder.
•Take 20 to 25 nos of almonds and soak them 3 to 4 hours prior to the recipe preparation.
•Almonds can be soaked overnight also, then peel them and place them aside for a while.
•Add almonds to the boiled hot water for a while to peel them off easily.
• Add the peeled almonds to a mixie jar with some milk or water.
•Grind it into a fine paste.
•Let the milk boil for 10 minutes, keep stirring it to add a few strands of saffron to enhance the flavour.
•Clean the edges and the cream as well so that as the milk thickens, it becomes creamy.
• Add the ground almond paste, stirring it well.
• Add some milk to the mixie jar shake it to mix and add to the milk pan.
• Boil it for 2 more minutes stirring it, add some sugar as per our taste.
• Add some cardamom powder to enhance the taste.
• Can be served hot or chilled.
• Garnish it with a few strands of saffron, almonds, and pistachios.
• Yummilicious almond milk is ready.
