Coconut laddoo is easy to make and is best suited for festivities and religious occasions

Hyderabad: Laddu or Laddoo is a popular and traditional Indian sweet — tasty, delightful and flavourful. A sphere-shaped dessert, laddoos are generally served during weddings, festivities and religious occasions. Laddoos are often made with gram flour, coconut, semolina, and nuts as well.
Different variants of laddoos include Boondi laddoo, Besan laddoo, Coconut laddoo, Dry fruit laddoo, Til / Sesame laddoo, Gondh laddoo or Edible gum laddoo and Rava laddoo or Semolina laddoo.
Coconut laddoo is one of the authentic Indian sweets that used to get packed in olden days for travellers and warriors as a symbol of good luck for their expedition. Coconut laddoo can be made with fresh coconut grate or dried / desiccated coconut as well.
Sweetened with either sugar or jaggery, flavoured with cardamom and condensed milk, it is used to enhance the taste, takes us to the next level when moulded with some nuts. It is also known as Nariyal ke laddoo, Thengai laddoo. These laddoos are soft, moist and melt in mouth.
As festive season is here, let’s try this delicious laddoo, which is simple and easy to make with minimal ingredients.
Ingredients
- Ghee : 1-1/2 tbsp
- Desiccated coconut : 2 cups
- Milk : 2 cups
- Milk Powder : 1/4 cup (optional)
- Sugar : 1/2 cup or as needed
- Cardamom Powder : 1/2 tsp
Method
- Heat a pan, add 1-1/2 tbsps of ghee, let it melt ,add 2 cups of desiccated coconut.
- Roast it well, on low flame, for 4 to 5 minutes, stirring it frequently so that it does not get burnt.
- Roast until the coconut changes colour; put off the flame and transfer it to a separate bowl.
- Add 2 cups of milk to a pan; use the same measuring cup used to measure coconut powder.
- Bring it to a boil, then add 1/4 cup of milk powder (it’s optional), mix well with no lumps.
- Add the roasted desiccated coconut to it, mix well and let it cook until the mixture thickens on low flame only.
- Add 1/2 cup of sugar or as required, and keep stirring it until sugar melts. Cook it until the mixture thickens (on low flame only).
- Add 1/2 a tsp of cardamom powder, blend well and take it off the flame.
- Let it cool down for a while, grease your hands with some ghee, take a small portion of the mixture and roll it into a laddoo.
- Dry fruits or nuts of our choice can be added. Roll them in coconut powder once.
- Tasty coconut laddoos are ready to serve.
