Hyderabad: This weekend, head to Pit stop at Mazzo, the rooftop restaurant at Marriott Executive Apartments in Hyderabad, which promises an enticing journey of flavours from Kashmir to Kanyakumari. National Highway 44, or simply NH44, is India’s longest highway at 3,745 km, spanning the length of the country and traversing through 11 States – starting from Srinagar and ending at Kanyakumari. The festival menu features three dozen dishes culled from these States.
One can take their pick from Aloo dabara from Kashmir, Tawa paneer tikka, Bhatti ka murgh, Hyderabadi Tala hua gosht in starters.
For the main course, there is Jimikand ke kofte, Gutti vankaya, Langarwali dal, Dhaba gosht, and Meen kuzhambu. All of the preparations are absolutely delectable. The Jimikand ke kofte, yam dumplings in a rich creamy gravy, is a popular vegetarian preparation from Uttar Pradesh. The Gutti vankaya, a common staple in households across the city pairs beautifully with Indian breads.
Langarwali dal, which is also known as Amritsari dal, is a traditional Punjabi dish that’s also served in gurudwaras. It’s a creamy, thick lentil gravy made using split-bengal gram and black gram. Dhaba gosht is a spicy lamb curry that draws inspiration from the mutton curries served by the roadside eateries in Punjab, while the Meen kuzhambu is a Tamil preparation in which fish is simmered with onion, tomatoes, tamarind and red chillies. Curated by head chef Raja Hedge, this one is sure to be a pet-puja.
