Hyderabad: It’s no doubt that potato is an all-time favourite vegetable in most Indian households and thus this Aloo Butter Masala – a rich flavourful, creamy, and delicious curry recipe can be a perfect feast on any busy day. A perfect Indian recipe, a yummy side dish that goes well with all the Indian flatbreads, plain rice, and flavoured rice as well.
This is an incredibly easy and perfect curry recipe for special occasions with family and friends and especially for vegetarians and potato lovers. This recipe is similar to Paneer Butter Masala/ Chicken yet replaced with potatoes. Paneer, makhana and peas can also be added if you wish to make the curry more flavourful and tasty. Delightful recipe, with a delightful vegetable and a favourite veggie for all.
Ingredients
* Baby potatoes : 1/2 kg
* Butter : 1 tbsp
* Cumin seeds : 1 tsp
* Cashews : 7 to 8 nos
* Onion : 1 chopped
* Ginger : 1 small piece
* Garlic : 4 to 5 cloves
* Green chillies : 2 nos
* Tomatoes : 2 chopped
* Oil : 1 tbsp
* Butter : 1/2 tbsp
* Chilli powder : 1 1/2 tsp
* Salt : 1/2 tsp
* Turmeric powder: 1/2 tsp
* Coriander powder: 1 tsp
* Kasuri methi : 1 tsp
* Garam masala : 1/4 tsp
* Coriander leaves: For garnishing
Method:
* Take baby potatoes or normal potatoes can also be used but slice them in big pieces.
* Boil them in a cooker or a vessel, along with some salt when boiling and peel them all.
* Heat a tablespoon of butter in a pan, let it melt, and add a teaspoon of cumin seeds. Let it splutter.
* Add 7 to 8 cashews and sauté until colour changes. Add an onion chopped, a small piece of ginger, 4 to 5 garlic cloves, 2 to 3 green chillies.
* Add 2 tomatoes chopped, stir and sauté until soft, place a lid and let cook for a while. Put off the flame and let it cool down, completely.
* Add them all to a mixie jar and grind it into a fine paste, keep it aside for a while.
* Heat a pan with a tablespoon of oil, add the potatoes and stir fry them all for 5 to 6 minutes on medium flame, and transfer them to a separate bowl.
* They can also be deep-fried if you wish to but we don’t have to boil them then.
* Add 1/2 a tablespoon of butter to the same pan, add the ground masala and sauté for 1 to 2 minutes on low flame.
* Add 1 1/2 teaspoon of chilli powder, salt or as needed,1/2 a teaspoon of turmeric powder, a teaspoon of coriander powder and stir.
* Add fried potatoes, mix and add 1/2 a cup of water. Add some water to the mixie jar and add the water as well.
* Let cook for sometime, adjust the taste and add a tsp of Kasuri Methi, 1/4 tsp of garam masala and let cook for sometime.
* Add some fresh cream to enhance the taste of the recipe, add some coriander leaves to garnish it and put off the flame.
* Tasty aloo butter masala is ready.
